What You SHOULD Eat In A Day | Healthy Vegetarian/Vegan Model Meals | Sanne Vloet

Hi Guys!

I’m a little under the weather today and I am in Holland with family, but I wanted to wish everyone back in the USA a happy Memorial Day Weekend! I hope the weather is as nice there as it is here!

I visited my friend and health food chef, Shigeko, out at her home in the Hamptons and we had time to talk about healthy recipes and food inspiration from around the world! Indonesia was one of the first places that I ever traveled to with my best friends and I still remember that Gado Gado was one of my favorite dishes! We literally had it almost everyday for three weeks straight. Let me know if you have tried Gado Gado before!

The great thing about this recipe is that you can choose any vegetable you like or have. Just in case, I’ve listed the same grocery list below for you guys that we used to make this dish!

INGREDIENTS GROCERY LIST:

– 1 Cup cooked quinoa
– 1 Cup water
– 1 Zucchini
– 1 Red bell pepper
– ½ Broccoli
– 4 Whole carrots
– ( Other veggies ideas are Red cabbage, Cauliflower or Mung Beans )

Spicy Peanut Sauce:

– 1/3 Cup ( 75g ) Peanut Butter
– 1 Tbsp Tamari or Soy sauce
– 2-3 Tbsp Maple syrup
– 3 Tbsp Lime juice
– 1 tsp Chili Garlic sauce or a red chili.

For serving optional:
– Cilantro
– Lime wedges
– Red pepper flakes
