Serves 1 pax
5g of chopped young ginger
3 cloves of chopped garlic
1 stalk of spring onion (stem only) – smashed
1 tablespoon of Chinese white rice wine
2 tablespoons of light soy sauce
1/3 teaspoon of sugar
1/3 teaspoon of salt
1/2 teaspoon of sesame oil
220g of grouper (garoupa) fish fillet
2 pieces of baking paper
Bake fish at 220C (428F) for 15 minutes. Preheat your oven at the same temperature for at least 30 minutes before cooking.
