Stir Fry Cod & Mixed Vegetables (Chinese Style Cooking Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

300g Cod Fillet
50g Celery
50g Carrot
50g Roasted Cashew Nuts
1 Tbsp Cornflour
10g Cooking Wine
1 Tsp Ground White Pepper
80ml Stock
Salt to Taste

1. Cut the carrot into 1cm cubes
2. Cut the celery into 2cm in length pieces
3. Cut cod fillet into 2cm cubes
4. Place white pepper, stock and cornflour into a bowl and mix
5. Heat 1 Tbsp oil in the wok
6. Add the carrot and celery, stir-fry for 2 minutes, remove onto a dish
7. Heat 2 Tbsp oil in the wok
8. Fry the cashew nut for few seconds
9. Add the cod & stir-fry for 5 minutes
10. Return the carrot and celery to the wok & add salt
11. Add the cooking wine and the cornflour mixture
12. Gently stir once and bring to the boil
13. Pour sesame oil onto the fish and toss
14. Transfer to a dish and serve
