Power Cooker Recipes // Easy Mexican Quinoa Recipe
I love sharing these pressure cooker recipes! This Mexican Quinoa is one of our family’s go-to meals because it’s so dang easy! The real work for this meal should take you about 5-10 minutes while the rest of the time is spent cooking. Set the timer and go have some fun doing something else. I Love cooking in the pressure cooker because I don’t have to stand there watching it or have to keep stirring it every few minutes. Let me know if you tried this recipe and what you thought of it!
This Recipe serves about 4 bowls
Easily double, or triple this recipe for more servings
1 cup quinoa (rinsed and drained)
1 cup Corn (frozen is fine)
1 whole Onion chopped
4-5 Garlic cloves minced
1 – 15oz can black beans drained
1 – 15oz can fire roasted diced tomatoes
1 tsp chili powder
1/2 tsp cumin
1/4 tsp pepper
1 cup vegetable stock
Add all ingredients together in the pot and give it a stir to combine. (If you don’t stir, the spices will float and stay in one place on top.)
Place your pot into the pressure cooker, lock and seal the vent. Cook for 20 minutes. When the timer goes off release the steam and give the quinoa one final stir before plating. Top with lime juice, cilantro, or my personal favorite — Avocado! DELICIOUS!
If you don’t have a pressure cooker — Get a large pot and bring everything to a boil over high heat. Cover with lid and lower heat to low. Simmer, covered for about 30 minutes.
