– Pearl barley – 1 cup
– Potato – 600g
– Onion – 1 pc.
– Mushrooms – 250g
– Parsley – 30g
– Sorrel – 100g
– Dill – 2-3 sprigs
– Vegetable oil – 2-3 tablespoons.
– Tomato juice – 1 cup
– Salt – 1 tbsp. (to taste)
– Ground black pepper – 1/4 tsp (to taste)
– Bay leaf – 1 pc.

Rinse pearled barley and cook until half cooked (about 30 minutes). At that time: Peel and chop potatoes and onions. Chop mushrooms and greens. Fry the onion and add mushrooms. Stew until the liquid evaporates. Add the sorrel, tomato juice and stew for another 2 minutes.
Pour into a saucepan, add salt, spices and the remaining greens. After boiling the soup, switch off the flame. The soup is ready.
