Pea Salad With Bacon and Cheddar
1 1/2 cups of frozen peas, thawed and gently blotted with paper towel
1 small rib celery, finely diced
1 tablespoon finely diced onion
2 tablespoons tomato, seeded, diced
1 ounce cheddar cheese, cut into small dice
1 to 1 1/2 strips crisp bacon, chopped
1 hard boiled egg
1/4 cup mayonnaise
1/2 teaspoon sugar
1/2 teaspoon vinegar
salt & pepper to taste
In medium mixing bowl combine peas, mayonnaise, sugar, vinegar, salt and pepper. Stir gently to combine, taking care not to break the peas.
Add the diced celery, onion, tomato, cheddar cheese and half of the chopped bacon.
Transfer to serving bowl and top with quartered hard boiled egg and the remainder of the bacon. Chill, if desired, for 1/2 hour. Serve cold as is or on lettuce.
to leftovers add one of the following:
1 5-ounce can of water packed tuna, well drained; OR
add 1 cup of cold, cooked macaroni; moisten with a little more mayonnaise or some creamy salad dressing; OR
combine 1 cup of cold, cooked rice with leftover salad. Add some grated parmesan cheese.
