4 Easy Vegetable Pulao Recipes in Instant Pot
Recipe 1 :
Quick Vegetable Pulao in Instant Pot
Ingredients :
Basmati Rice – 1 cup
Water – 1 & 1/2 cups
Frozen (or) Fresh Vegetables – 1 cup
Onion – 1 (medium size) – Cut into Slices
Green Chillies – 2 (slit )
Ginger Garlic Paste – 1 teaspoon
Oil (or) Ghee – 2 Tablespoons
Mint leaves (or) Coriander Leaves ,Salt
Spices :
Bay Leaves – 2,Cloves – 4,Cardamom – 2 ,Cinnamon Stick – 1 ( 1 or 2 inches ),
Shahi Jeera – 1/4 teaspoon,Peppercorns – 1/2 tsp
Procedure :
1. On Saute
2. Add Oil/Ghee
3. Add Spices , Saute Spices for just 10 seconds
4. Add Onion Slices , Saute till translucent
5. Add Ginger Garlic Paste , Saute for 10 seconds
6. Add Green Chillies
7. Add Frozen Veggies (or) Fresh Vegetables – 1 cup
8. Saute Vegetables for a minute
9. Add Water
10. Salt – Check Salt
11. Add Rice and Mix Well
12. Cancel Saute
13. Close the lid and vent to sealing position
14. Set Time : Manual – 6 minutes
Pressure – HIGH
Release – Wait for 5 minutes then Release the Pressure
Note : If Rice is soaked , the set time to 4 minutes ( Quick release after 5 minutes)
Recipe 2 :
Vegetable Pulao in Instant Pot
Ingredients :
Basmati Rice – 1 cup
Water – 1 & 1/2 cup
Onion – 1 ( medium size ) cut into slices
Green Chillies – 3 ( slit )
carrots , potato , Spinach , Beans Peas – 1/2 cup each
Ginger garlic paste – 1 Teaspoon
Turmeric – 1/2 Teaspoon ( Optional), Salt
Spices :
Cardamom – 2 ,Cinnamon – 1 ( 2 inches ),Cloves – 4,Star Anise – 1,Bay leaves – 2
Procedure :
First ,On Saute
Add : Ghee – 1 Tablespoon,Oil – 1 Tablespoon,Spices – Saute Spices for a minute
Add , Onions ,Green Chillies,Cashews
Saute till onions are translucent
Add , Ginger Garlic Paste and Saute for few seconds
Add , All Vegetables,Turmeric,Salt, Mint (or) Coriander Leaves
Saute for a minute
Add, Water and Rice , Mix Well
Cancel Saute
Close the lid and Seal
* On Manual – 6 minutes ( or) Pressure Cook – 6 minutes
Pressure – HIGH
Release – Quick Release
When done , Press Cancel
Wait for 5 minutes, then Quick Release
Open the lid and mix gently
Recipe : 3
Green Veggie Pulao in Instant Pot
* Step 1 : Basmati Rice – 1 cup
Add water and seal rice for 30 minutes
* Step 2 : Make Green Paste :
1. Green Chillies – 4 ( reduce or add to your spice level)
2. Coriander Leaves – 1/2 cup
3. Mint Leaves – 1/2 cup
4. Ginger – 2 inches
5. Garlic Cloves – 4
( (OR ) add Ginger Garlic Paste – 1 Tablespoon )
6. Water – little
7. Blend into smooth Paste
Spices :
1. Cinnamon Sticks – 2 inches
2. Cloves – 4
3. Cardamom Pods – 4
4. Star Anise – 1
5. Bay leaves – 2
6. Shahjeera – 1/2 teaspoon
Onion – 1 ( medium size ) – cut into slices
Cashews – 1/4 cup ( optional )
Ghee – 1 Tablespoon
Oil – 2 Tablespoons
Salt
Water – 1 & 1/2 cups
Vegetables :
1. Carrots – 1/2 cup
2. French Beans – 1/2 cup
3. Potatoes – 1/2 cup
4. Tomato – 1
5. Green Peas ( frozen) – 1/4 cup
( or ) Add your choice of veggies or Frozen Vegetables )
Procedure :
1. On Saute
2. Add Oil and Ghee
3. When Oil is hot add spices, and fry just a minute
4. Add Onion slices and Cashews – Saute Onions till they are translucent
5. Add Green chili paste – Saute just a minute
6. Add all Vegetables and mix well
7. Water ( 1 & 1/2 cups )
8. Add Salt and check salt and adjust
9. Add Rice and mix Well
10. Cancel Saute
11. Close the lid and Set vent to sealing position
12. Set Time : Manual – 4 minutes
Pressure – HIGH
Release – Quick Release
13. When Pressure is released open the lid before serving
Recipe : 4
Vegetable Pulao with Coconut Milk in Instant Pot
Basmati Rice – 1 cup
Water – 1 cup
Coconut Milk – 1 cup
Vegetables – 1 cup ( you choice ) – Carrots,Beans,Frozen Peas
Onions – 1 ( big size) cut into slices
Green Chillies – 4 ( slit )
Mint – little
Ginger Garlic Paste – 2 Tablespoons
Salt
Spices :
Cardamom – 2 ,Cinnamon sticks – 2 ( small ),Cloves – 6,Star Anise – 1
Procedure :
1. On Saute , add ghee and oil – 1 tablespoon each ( can add just one )
2. Add Spices,
3. Add Onion slices and green chillies – Sauce onions till they turn light brown
4. Add Vegetables & Mint leaves
5. Basmati Rice ( Just wash before adding )
6. Water & Coconut milk 1- 1 cup each
7. Salt – adjust salt
8. Cancel Saute
9. Close the lid and seal
10. Select – Manual (or) Pressure Cook – 6 minutes
11. Release – Quick Release ( when done release the pressure immediately and open lid before serving )
